This meatloaf is so good! I must admit, I’ve always been a big fan of meatloaf. My mom has a wonderful recipe that I’ve made for my own family for years now. What I like about the Nourishing Traditions recipe is all the added vegetables that are tucked inside it!
Seriously, look at all those veggies! And every member of the family eats this dish with glee… (mama is smiling.)
I adapted the original recipe to suit our family’s needs: gluten free rolled oats were substituted in place of the bread crumbs, I omitted the chili flakes (for the kids), and kicked up the cracked black pepper. I chose to use a mix of ground turkey and ground beef in equal amounts, and I omitted the ground heart and fish sauce (mainly because I didn’t have these ingredients on hand).
This is the meatloaf all ready to go into the oven. IT’S SO GOOD!!!

This looks delicious and I LOVE that it has a lot of veggies in it. My hubby eats vegetables only if I put them on his plate so anytime I can hide them in a dish I'm happy. I don't have those two ingredients you mentioned but I do have everything else so I'm going to print this recipe out. Thanks for sharing this with us! Ann, this is a really good recipe. I've had good meatloaf and I've had bad meatloaf. A good recipe makes all the difference. Give it a try and let me know what you think! About the quilt, I have no idea what pattern was used... I wish I did. I would love to make a replica one day. : )
I use to love meatloaf but hubs doesn't so we don't eat it anymore. Yours looks so good!
You need to pick up some fish sauce in an Asian Market. I bought a bottle, then it sat forever cause frankly I was a bit frightened of what I was in for. It is WONDERFUL and adds just the right flavor to everything. I use it in stir fry and BBQ sauce. I know NT uses it a lot so it won't go to waste!
Thanks for the tip, Diane! I admit that I was a bit afraid to try it myself. And you're right, it's used in many of the NT recipes. Certainly worth picking up a bottle if you recommend it!
