Easy Blueberry Muffins

I love to bake. Most of what we eat, I cook from scratch…

So when I find an easy and delicious recipe that everybody loves, it fast becomes a staple on our table.

I use whole wheat flour almost exclusively. These blueberry muffins and my pie crusts are the exceptions.

For these, my family prefers the lightness of unbleached naturally white flour. You can certainly substitute regular whole wheat flour, and I’ve done so many times, just be sure to use 3/4 cup whole wheat flour for every 1 cup white flour.

Easy Blueberry Muffins

1/2 c. butter

1/2 c. sugar

1 egg

1 c. milk

2 c. unbleached naturally white flour

3 tsp. baking powder

1/2 tsp. salt

1 c. fresh or frozen blueberries

Preheat oven to 400 degrees. Blend together butter, sugar, egg, and milk. In separate bowl, mix together flour, baking powder, and salt. Then blend together the two mixtures, being careful not to over mix, or your muffins will not be light. Fold in blueberries. Bake 30 minutes or until lightly golden on top.

These are so very easy. Sometimes I make them with strawberries or blackberries instead of blueberries. It just depends on what I have on hand. And all of the ingredients I use are organic. Give these a try! You won’t be sorry.

Mmmm Melissa these look delicious! I like the idea that you can use what ever you have on hand too. I used to make muffins a lot when my kids were little but I got away from it over the years...this post has got me thinking that on the next rainy day here I'm going to make some of these muffins! Maura, they are delicious! You should absolutely give then a try. I make lots of muffins around here because I can make them ahead of time and have them on hand for breakfast or snacks. I am NOT a morning person. Grits, eggs, and bacon don't appear often on my breakfast table, but we do like to eat eggs for dinner from time to time!

Maybelline, we can grow blueberries here! I have a humongous old blueberry bush that is still producing berries. This spring, we purchased new vines/bushes for kiwis, grapes, blueberries, blackberries, raspberries, and strawberries. I am beyond excited about this!

Sue, we are a muffin lovin' bunch! I'm making a strawberry version of these today.

Good Morning Melissa! I was just showing my husband pictures of your beautiful pond this morning before he went to bed (works nights) and I saw your post about your surgery. I feel terrible for not asking before now but how is your neck doing? I hope the surgery took care of the pain and that you have no problem with movement.

Grits...gulp...we get them with breakfast at the Cracker Barrel (it comes with it). I like them if I can put brown sugar and milk on them but I think it would take an aquired taste for me to eat them like they come. What do you put on yours? I guess you can tell I'm from the north. Anyway...I hope you have a WONDERFUL day over there in Alabama...enjoy that pond! Take care. Maura

Maura, I grew up on grits, a true southerner. And have always LOVED them with a little salt and REAL butter. So very good! They're not eaten sweet around these parts (as far as I know). I especially enjoy grits with scrambled eggs and homemade biscuits. I actually prefer eggs with grits, a bite of each eaten together. Yum! I'm hungry now... :)

As for my neck, I'm sorry to report there's no improvement yet. I really appreciate you asking. It's been frustrating and painful, but I haven't lost hope. God is the Great Physician!
